Thirsty Souls: Plant-Based Meals

This week we're thirsty for earthy fare. These plant-based meals give a delicious new meaning to the phrase "veg out!"

1. Breakfast

Toss your tumbler aside and try a smoothie bowl for breakfast. Starting the morning off with a twist will have you expecting a new happy surprise around each corner as you move through the rest of your day! 

2. Lunch

Hearty soups, salads, and wraps provide all the nutrition you need to refuel midday. You know what they say - go green or go home!

3. Dinner

Whether you're filling up on veggie-chocked meatloaf or vegan black bean tacos and fresh salsa, make sure to dine with the ones you love.  Everybody needs someone to share a Cactus Water toast with!

Do you know the ((healthy turkey meatloaf)) muffin man...errrr ladyπŸ’πŸ»?! . Get some MUCH NEEDED extra #veggies this time of year with my Healthy Turkey Meatloaf Muffins thanks to @truefoodsinc BBQ sauce ((yup, the BBQ sauce has veggies!!)) and riced cauliflower! πŸ…πŸ  Taste-tester approved, #glutenfree, made with only 8 REAL ingredients (plus spices) + adorably cute because everything tastes better when it’s mini and made in a muffin tin! βœ”οΈ . πŸ“Here’s how to make it >> In a large bowl, combine the following ingredients + mix to combine: 1 lb organic ground turkey, 1/2 c. chopped onion, 1/2 c. riced cauliflower, 2 grated garlic cloves, 1/4 c. + 2 tbsps quick oats, 1/4 c. ground flaxseed meal (or an additional 1/4 c. oats), 1 large egg, 1/4 c. + 1 tbsp @truefoodsinc BBQ sauce, 1/4 tsp each black pepper, salt + smoked paprika and 1 tsp no salt Italian seasoning. Spray your muffin tin with nonstick spray + divide the batter evenly among 10 muffin cups (about a heaping 1/4 cup of the meatloaf mixture in each). Spread 1 tsp @truefoodsinc BBQ Sauce on top of each meatloaf muffin. Bake for 15 minutes @ 350F, then remove from the oven, add another 1/2 tsp @truefoodsinc BBQ Sauce on top of each meatloaf muffin and bake for another 5 minutes. The turkey meatloaf muffins will be slightly browned at the edges when done cooking with edges slightly removed from the tin. 4. Snack

Get creative with your munchies so you'll never have to hit up the vending machine again.  You can put those quarters to use feeding parking meters in the name of good karma instead!

5. Dessert

Mother Nature doesn't ask you to deny your sweet tooth, and neither will we!  Did someone say mango cheesecake?!?
